To say that our attempt to cope with the world is a metaphysical stance
begs the question because as far as we can tell, we are not debating about
how the world _really_ is, we are just trying to deal with it.
This statement begs the question of "How you can deal with the world
when you don't know what it really is?"

Yes, exactly. This is why I say that both sides are begging the question
over the other. The pragmatists are banking that your question doesn't
turn out to matter and you are concerned that it does.
